Lime Coconut Honey Bliss Bites


These Lime Coconut Honey Bliss Bites are so incredibly easy to make and super nourishing and immune supportive. Healthy treats do not get any easier than this!

Ingredients

INGREDIENTS

160 g almond meal (1¼ cups)
80 g desiccated coconut (½ cup) approximately, plus extra to sprinkle
60 g coconut oil (¼ cup)
45 g Barnes Naturals manuka honey (3 tbsp), approximately
1 tbsp vanilla – extract or essence
1 lime/s – zest of the whole lime and 3 tbsp juice (about half lime)

Instructions

  1. Place all the ingredients into a bowl and mix to combine into a sticky dough. If using a Thermomix, blend 30 seconds, speed 4.
  2. Press into a loaf tin lined with baking paper. I use a wet spoon to compact it.
  3. Sprinkle over the extra coconut and press down.
  4. Chill in the fridge for an hour to set. Cut into small cubes or ‘bliss bites’. If you’d prefer these can also be rolled into bliss balls.
  5. Store and serve: As with any raw treat, these don’t hold up to heat well. I always store them in the freezer and if packing in a lunchbox, pack from frozen and against an ice brick.
  6. Make your own almond meal: Use a powerful food processor or Thermomix to grind the same weight of almonds until fine – if you over process it will turn into nut butter so keep an eye on it! Commercial almond meal is usually a bit finer than home-made.
  7. Make it nut free: Replace the almond meal with a sunflower seed meal.
