Choc Peanut and Manuka Rice Slice

A simple no-bake treat that is lightly sweet with a satisfying crunch and very good to share.

Ingredients

1 cup (150g) pumpkin seeds

½ cup (80g) roasted, unsalted peanuts

1 cup (30g) puffed rice

¾ cup (225g) unsweetened peanut butter

¼ cup (75g) Barnes Naturals Manuka Active Honey MGO 100+

30g extra virgin coconut oil

1 cup (150g) pitted and chopped dates

150g 70% dark chocolate, melted*

1 teaspoon sea salt flakes

Method

Chop. Place the pumpkin seeds and peanuts in a food processor and pulse 3-4 times until coarsely chopped. Set aside in a bowl along with the puffed rice.

Puree. Add the peanut butter, Manuka Active Honey and coconut oil to the food processor and process to combine. While the motor is running, gradually add the dates and continue until mixture is smooth.

Combine. In the bowl of a stand mixer, mix to combine the date and nut mixtures. Press the crumbly mixture firmly into the base of a baking paper-lined 20cm x 20cm cake pan. Chill for at least 30 minutes.

Topping. Pour the melted chocolate over the slice and sprinkle with salt. Allow to set.

Serve. Cut into 16 pieces and then serve or store chilled in an airtight container until required.
