This no bake granola combines a variety of nutrient-dense ingredients to create a delicious breakfast (or snack). A delicious blend of toasted nuts, seeds, rolled oats, buckwheat, golden berries, and goji berries provides a satisfying crunch and a tart burst of flavour. Manuka Honey spiced with Turmeric, Ginger, and Cinnamon adds a natural aromatic sweetness – this granola is not baked to preserve the heat-sensitive bioactive compounds of Manuka honey. This no bake granola is a versatile and convenient option that can be enjoyed on its own, yogurt, or as a topping for a smoothie bowls.
For the granola mix:
¼ cup Pistachio
½ cup Pecans
¼ cup Pepitas
¼ cup Sunflower Seeds
½ cup Activated Buckwheat
½ cup Coconut Flakes
½ cup Rolled Oats
1 handful Goji Berries
Golden (Inca) Berries
1 Tbs Cacao Nibs
For the spiced honey:
1/2 cup Manuka Active MGO 100+
1 tsp Cinnamon Powder
½ tsp Turmeric Powder
½ tsp Ginger Powder
10 drops Vanilla Extract
Pinch of Himalayan Pink Salt
Prepare the Ingredients— Toast the pistachios, pecans, pepitas, sunflower seeds, activated buckwheat, coconut flakes, cacao nibs and rolled oats in a dry fry pan over medium heat for 3-5 minutes, or until fragrant, slightly browned. Ensure to stir the mix to toast evenly and take care not to burn the mix.
Combine the Ingredients— In a large bowl, combine the toasted nuts, seeds, buckwheat, coconut flakes, oats, goji berries, golden berries, and cacao nibs. Pour the spiced honey mixture over the dry ingredients and mix well to ensure everything is evenly coated.
Set the Mixture —Line a baking tray with baking paper. Spread the mixture evenly in the tray, pressing it down firmly. Place another sheet of baking paper on top and press down with something heavy to compact the mixture. Refrigerate for about 10 minutes to set.
Serving and Storage— Crumble into pieces and enjoy on its own, as a topper for smoothie bowels or serve with yoghurt and fresh berries. Store the remaining granola in a glass jar or an airtight container in the refrigerator for up to 2 weeks.
